Its a bummer that strawberries are gone. We had a nice 3 week season, but the time seems too short. We do have loads of veggies for your holiday celebrations. Our Summer Squash is out! It is delicious. I will follow with a recipe for squash quiche. I made it Sunday night, and we scoffed that down. The tomatoes are field grown from the carolinas, and they are very juicy and tasty. We also have spinach, beets, beet greens, lettuce, snap peas, shelling peas, radish, peppers, cukes,blueberries, nectarines, plums and more. We still have homeade Strawberry Ice cream from kellys, and Pies will come in on Friday afternoon.
It was nice to have some sunny days. we need those desperately. Hopefully corn will start soon. We start our Hill market this Friday. It is located at Ct. Mental health Center across from Smilow Cancer Center. Next week we start in Fair Haven on Thursday on Front Street. These are both City Seed Markets. We are looking forward to another season with City Seed. Our CSA is chugging along. We are already on our third week! Follows is my quiche recipe.
Squash Quiche
1.Line a pie dish with a crust. Cover bottom of crust with 1 1/2 cups grated Cheddar Cheese.
2.Cover cheese with 2 1/2- 3 cups sauteed green and yellow squash. I usually saute some onion with it, or some garlic scapes!
3. Make a custard: Beat well together 4 eggs, 1 1/2 cups milk, 3 tbs. flour, 1/4 tsp salt, and 1/4 tsp dry mustard.
4.Pour custard over squash. Bake at 375 degrees for 40-45 minutes or until solid in the center when jiggled.
I made your quiche and everybody in our house loved it! Which is unusual for both kids to like something. Will make again.
