The fresh spinach and asparagus is so good I can hardly stand it! I made panne cotto (is that how you spell it?) with the spinach. I sauteed 3 cloves of minced garlic in oil. Then I added 3 of our bags of Spinach, stems removed and sauteed. I added 2 cans of white beans, 1/4 cup chicken broth, and some killer buffalo parmesan from Liuzzi’s that Sue Nero recommended. THen I sliced Italian bread in a big Pyrex, Put the spinach over and baked at 350 for 20 minutes. That was our meal, Fantastic. Spinach Frittata is also a great meatless meal, nice and quick when you get home from your busy day. THe Asparagus is so good pan steamed with a couple of tablesppons of water and butter, or roasted.When I pan steam ,I take the fat stalks, peel halfway and cut on a diagonal. It is so sweet. I made the asparagus puff last week and that was delicious. The recipe is in the stand.
Things are slowed up this week because of the rain, but we are supoosed to have a beautiful weekend. Not much planting going on this week. See you in the stand. Liz
